European tradition of aging wine not just in oak barrels, but in bottle—sometimes for many years—before we release it. And in doing so, we’ve chosen a philosophy that defies modern pace. One that values

Wine That Learns While It Waits
In Italy, France, and Spain, it’s not uncommon to find wines with 10, 12, even 15 years of bottle age—still vibrant, still expressive, still telling their story. That time isn’t wasted. It’s invested.
After fermenting and resting in oak barrels, we give our wines something they rarely get in California: time in the dark. In silence. In stillness. In perfect conditions to soften, deepen, and evolve.
Tannins settle. Acidity integrates. Aromatics expand. What once was fruit becomes feeling—complex, savory, expressive. You’re not just drinking wine. You’re drinking what it became, not just what it was.
What’s the Rush?
In much of the U.S., wine is released and consumed within a year. It’s bought on impulse, opened on a Tuesday, and often judged while it’s still finding its footing.
We don’t rush our wines because we respect them too much to do so. And
we respect you too much to hand you something half-formed.

You can’t go backward and give wine time after it’s been bottled and sold. Once it’s released too early, it’s yours to manage, store, or guess when to open.
