Varietal Qualities

The Pinot Noir grapes were hand harvested to preserve fruit integrity; the grapes were de-stemmed but not crushed prior to undergoing a 5-day “cold soak” – a method with gently extracts color and flavor without harsh tannins.

Using open top fermenters, the juice was fermented using mainly native yeasts. During fermenting a pneumatic punch was used to gently plunge the cap into the juice three times a day. With fermentation complete the wines was placed in French oak Barrels (80% new), specifically coopered for Pinot Noir, where ageing took place for 10 months. The wine was tasted weekly and was racked and blended just prior to bottling.

Wine Notes

The nose show beautiful aromas of cherry liqueur, ripe plum and high toned red fruit flavors of ripe cherry are complemented by notes of clove and anise on the palate. The finish is long and expansive, with subtle minerality and soft tannins.
